muffins and savory sausage bread pudding

just a few of my favorite fast and easy breakfast ideas I've used over the last few weeks! Some were asking for the Savory Sausage Bread Pudding recipe so here it is!

Savory Sausage Bread Pudding

4 eggs
2 cups milk or 1 cup half and half and 1 cup milk
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp dried thyme
1/8 tsp crushed red pepper
1 package smoked breakfast sausage links
3/4 cup shredded cheddar cheese
2 cups day old bread, cut into 1/2 inch cubes

Beat eggs in a large bowl. add milk, salt, pepper, thyme and pepper flakes; stir in well. cut sausage into half inch pieces. Stir in well. Cut sausage into half inch pieces. Stir in sausage, cheese and bread. Press bread into egg mixture. Set aside 10 minutes or until bread has absorbed liquid.

Pour sausage mixture into crock pot and cook on low 4-5 hours.

Apple Sauce Muffins

6 tablespoons butter
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
2/3 cup brown sugar
1 1/2 cups chunky applesauce

Kids' Cooking Skills: Use this recipe as an opportunity to teach your kids how to mix wet and dry ingredients, scoop batter into muffin tins, and test for doneness.

Heat the oven to 375 degrees. Line a 12-cup muffin tin with bake cups and set aside.

In a small microwave-safe bowl, melt the butter on high for about 30 to 60 seconds; set aside to cool slightly.

Sift together the flour, baking powder, baking soda, cinnamon, and salt into a large mixing bowl. When mixing dry and wet ingredients for muffins, gently stir just until the flour disappears. This will produce muffins with a nice crumbly texture.

In another large bowl, whisk together the eggs and brown sugar. Stir in the applesauce and melted butter until the mixture is smooth. For mess-free muffins, use an ice-cream scoop to spoon the batter into the bake cups.

Pour the apple mixture over the flour mixture. Mix with a wooden spoon until combined (it's ready when you can't see any traces of flour).

Fill the bake cups about two-thirds full with batter. Bake for 20 minutes or until light brown.

Have your kids test for doneness by inserting a knife in the middle of one muffin. If it comes out clean, the muffins are ready to eat. Makes 12.

Chocolate Chip Muffins

Ingredients
2 cups all-purpose flour
1/2 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1/3 cup vegetable oil
1 egg
3/4 cup mini semi-sweet chocolate chips
3 tablespoons white sugar
2 tablespoons brown sugar

Directions
1.Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
2.In a medium bowl, combine flour, 1/2 cup sugar, baking powder, chocolate chips, and salt; mix well. In a small bowl, combine milk, oil and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.)
3.Fill cups 2/3 full. Sprinkle tops of muffins before baking with a combination of 3 tablespoons sugar and 2 tablespoon brown sugar.
4.Bake for 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.
