Black Bean Mexican Casserole

one of my favs but the family is not however as big of a fan! Still super yummy but I love all mexican type recipes lol \

1 tomato chopped
1 1/2 cups chopped chicken
1 can of black beans rinsed and drained
2-3 flour tortillas
1 1/2 cups of mexican blend cheese
1 tsp of ground cumin

Mix first 3 ingredients in a bowl.
Pour half the mixture into a casserole dish, top with half of the cheese, then layer with strips of flour tortillas til covered.
Pour the rest of the mixture on top and repeat again making a new layer.
Cover with foil and bake at 350 for 30 minutes.

Some more fun today! I organized my dresser drawer by separating my underwear and socks with cut up soda can boxes, then my bathroom drawer!
Then I cut up pringle cans and a sunny d jug and decorated it with wrapping paper to organize some stuff on the desk!

My fun today! I have been saving old wine bottles and painted them today red, white and blue to match my kitchen then with chalk board paint so we can write messages on them! Compliments of pinterest!

South Dakota Meatloaf, Mashed Potatoes and Corn on the Cob!

South Dakota Meat Loaf

Ingredients:

1 egg, lightly beaten



1/3 cup evaporated milk

2 tbs worcestershire sauce

3/4 cup quick-cooking oats

1/4 cup chopped onion

1 tsp salt

1/2 tsp rubbed sage

1/8 tsp pepper

1-1/2 pounds ground beef

1/4 cup ketchup

In a large bowl, combine the egg, milk, worcestershire sauce, oats, onion, salt, sage, and pepper. Crumble beef over mixture and mix well.

Press into an ungreased 8in x 4in loaf pan Bake, uncovered at 350 for 1-1/4 hours, drain.

Spread ketchup over meat loaf Bake 10 minutes longer or until meat is no longer pink

Let stand for 10 minutes before slicing.

Beef Enchiladas and Mexican Rice

Dinner tonight! First time I've cooked a real meal in this house since getting food poisoning at a local restaurant a week ago :(
This is one of my favorite easy quick recipes!
Beef Enchiladas
1 lb ground beef 1 can enchilada sauce 8 flour tortillas 1 Cup Queso Dip
Brown Beef in Skillet and drain. Set Aside
Poor 1/3 enchilada sauce over a baking dish
Mix beef and 1/3 enchilada sauce in a bowl.
Put about 2 spoonfuls in a flour tortilla, roll and put inside of a baking dish. Repeat til all 8 are done and baking dish lined with enchiladas.
Pour the remaining sauce over the enchiladas and top with cup of queso dip
bake at 350 for 15-20 minutes uncovered

Chore Charts for Mom and Kids!

Finally updated the kids chore charts to look a little bit better then the big poster board we had that I wrote on! This looks a little more organized! And I made one for myself to try to keep myself a little more "organized" on my cleaning schedule! Granted I do the stuff mostly anyways it's nice to have a list to go off of to remind me hey did I do this today and feel organized! The one with pictures if for the toddler of the house :)

Underground City in Leavenworth

even though this report was done a few years back I thought this was just way to cool not to share or for people to forget! Such a neat part of history!! Check out this video on this underground city here in Leavenworth that was found with windows, doors, possible stores and more underground!
