We made a trip back home to Oklahoma to visit family on Sunday for about a week! Arrived safely and my childs way of amusing himself on the 5hr trip was drawing a muschace and beard and making funny faces at people along the way lol

We've been enjoying the visit so far and I've been catching up on some much needed sleep! I needed a break from everything going on in normal life from medical appointments and other stresses and just to recoop and see family.

The kids have been swimming in my parents pool every day and loving that they have a big pool right out the door to enjoy!

Haven't figured out what to do for the 4th of July just yet since there are fire bans but trying to plan out something hopefully exciting for the kids!

Wallgreens, Sears, and CVS Trip 6/27

Got boys some new shoes since theirs were starting to get really used looking lol $40 shoes on sale for 19.99 at sears and had a 15% off coupon and as long as they still fit I can replace them for the brand new ones if they get to worn down before school starts with the kids advantage program!

Saved $12 at CVS, got 2 laundry detergants, hand cream and toothepaste for $8

My absolute best find for me was Aidan's been begging for a flat guitar and I made a deal with him if he did his chores for 2wks with out being asked or reminded he could get it. Norl I see them for $17, they had them for $14 at wallgreens and 50% so I lucked out!

So I saved $57 at wallgreens and spent $19 at wallgreens! 4 cans of pringles, 2 hair color boxes, flat band guitar, 4 chicken broths, 5 diet pepsi 12pks, batteries, 3 packs envelopes, shaver refills

this last weekend we spent the weekend having a few little "free" adventures and using up some coupons!

on Friday we went to Chucky Cheese and spent about 2 hours playing completely free after our free token coupons!

on Saturday we went to chickfila to play for a bit and I got lunch and the kids ice cream for free!

Beef Enchiladas, Mexican Rice and Beans

for dinner tonight!!

Beef Enchiladas

1lb beef
2 cans enchilada sauce
1 1/2 c shredded cheese
1 package flour tortillas
1 small can nacho cheese

Heat oven to 375

Cook beef and drain.
Stir in 3/4c of enchilada sauce and 1c cheese.
Spoon enchilada filling in tortilla; roll up and place seam side down. Pour reminaing enchilada sauce and cheese over top.
Drizzle with queso.

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutesIngredients:
•2 tablespoons oil
•1/4 of a medium onion*
•1 1/2 cups rice
•3 cloves finely chopped garlic *
•2 1/2 cups chicken broth
•1 cup plain tomato sauce*
•4 heaping tablespoons of finely chopped parsley (optional)
Preparation:
In a medium sauce pan, heat oil over medium heat. Add in the fresh onion. Saute for 1-2 minutes until softened. Add dry rice and cook with the onions for about 5 minutes or until rice becomes a golden brown color. Add in the garlic to the rice and saute for one more minute.
Add in broth and tomato sauce (add slowly into the rice, not directly onto hot pan!) And then add in the parsley if you're using it. Stir it up and bring to a boil. Once it starts boiling, turn the heat to low and cover. Let it simmer for 20 minutes and fluff with a fork.

White Chili

recipe I'm trying tonight! Another really inexpensive recipe (even more if you are on wic and can use wic foods!)

White Chili

2 Tbsp vegetable oil
1 cup onion, chopped
For a variation, add:

1 pound lean ground turkey OR chopped chicken
Heat vegetable oil in a large pan over medium heat. Add onion and turkey. Cook until meat is browned throughout.


--------------------------------------------------------------------------------

1 tsp garlic powder
1 tsp cumin
6 cups chicken broth OR prepared bouillon
1 can (15-16 oz.) corn OR 1 package (10 oz.) frozen corn
1 can (15-16 oz. white beans, drained (such as cannellini, great northern or navy - use 2 cans if not using meat)
1/2 cup wild or brown rice, dry
For a variation, add:

1 green pepper, diced
Add garlic powder, cumin, broth, corn, beans, rice and green pepper to pan. Mix well.

Cook just below boiling for 30-40 minutes, until rice is tender.

Servings: 6

Absolutely loving the summer deals we are finding this year! We signed the kids up for the free summer bowling program where they can bowl 2 games a day for free with Halmark Lanes and just pay for shoes!

I've been meaning to get around to it sooner but things have been crazy pushing in appointments, helping friends out and enjoying the pool a few times that we just now got around to going bowling tonight!

I didn't bowl since I didn't think I could manage with the baby but she didn't do to bad for the first game so I might have been able to get by with it! She was more so pissed off she couldn't bowl with us and wanted to do it herself and not watch haha

Aidan, my oldest won both games!

Eggplant Parmesan II

Ingredients
3 eggplant, peeled and thinly sliced
2 eggs, beaten
4 cups Italian seasoned bread crumbs
6 cups spaghetti sauce, divided
1 (16 ounce) package mozzarella cheese, shredded and divided
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon dried basil
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.Dip eggplant slices in egg, then in bread crumbs. Place in a single layer on a baking sheet. Bake in preheated oven for 5 minutes on each side.
3.In a 9x13 inch baking dish spread spaghetti sauce to cover the bottom. Place a layer of eggplant slices in the sauce. Sprinkle with mozzarella and Parmesan cheeses. Repeat with remaining ingredients, ending with the cheeses. Sprinkle basil on top.
4.Bake in preheated oven for 35 minutes, or until golden brown.

Flying Vikings

Yesterday my son Keagan got a wonderful opportunity provided by a group called Flying Vikings! They provide an opportunity for children with special needs/chronic illness between the ages of 6-18yrs old a chance to get to be a pilot or a passengers and a sibling be a pilot for them if they are not able to physically do it free to them and their families.
They had partnered up with our church and Keagan got to go be a pilot and daddy and brother rode along as passengers! He hasn't been able to stop going on about this since yesterday! Just seeing the pictures and knowing what a wonderful memories it is for him really brought tears to my eyes!
They had a lot of wonderful sponsors there with food and crafts for them as well. I am very very thankful to these people. They are truly blessed for what they do and I am blessed to have them offer this to our family. I hope that many others have the opportunity!

Well I started couponing about 2 months ago I believe? I did the HEB coupons for close to a year now but just started checking sales, matching up and using manufactured coupons and building a stock pile! It has really grown and grown for nothing more then my normal grocerie budget (if even that)

I'm running out of room to put things so I'm going to have to take a break on a few things! My deep freeze is completely full as well as all the pictures I'm about to show! I remember a time when we lived pay check to pay check and did well on our great budget and got plenty for our family of 6 but would run out before the next pay day! Now we can't choose what to eat and have over a months worth of dinners I know off the top of my head.. more if I played around with some recipes!

I scoped out Kmart today because well I wasn't paying attention and thought the double coupon started today lmao and here are a few things I found that were a decent deal on match ups if you have the coupons for them! Now there may be some more that I didn't have c oupons on me for that you might be able to match up or in the sales ad tomorrow!

I wasn't impressed with a few thigns because as always I think kmart drastically jacks up their prices and noticed a lot of items that were priced $1.00 to $2.00 more then what I would pay at HEB, Walmart, Commissary.. etc leaving it not even worth it after the coupon was doubled.

making this tonight for dinner as we speak! I actually wound up doubling the recipe just in case :)

6 ServingsPrep: 10 min. Cook: 1-3/4 hours10 105 115 Ingredients
6 tablespoons all-purpose flour, divided
1 teaspoon paprika
1/4 teaspoon pepper
1-1/2 pounds beef stew meat, cut into 1-inch cubes
1 tablespoon canola oil
2 cups water
3 tablespoons tomato paste
2 teaspoons beef bouillon granules
2 teaspoons dried basil, divided
1 teaspoon dried thyme, divided
1 teaspoon garlic powder, divided
2 bay leaves
3 cups cubed peeled potatoes
3 cups quartered peeled small onions
2 cups sliced carrots
2 tablespoons minced fresh parsley
1/4 teaspoon salt
1/4 cup cold water

Directions
In a large resealable plastic bag, combine 4 tablespoons flour, paprika and pepper. Add beef, a few pieces at a time, and shake to coat.
In a Dutch oven, brown beef in oil over medium heat. Add the water, tomato paste, bouillon, 1-1/2 teaspoons basil, 3/4 teaspoon thyme, 3/4 teaspoon garlic powder and bay leaves. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 hours or until meat is almost tender.
Add the potatoes, onions and carrots. Cover and simmer 30 minutes longer or until the meat and vegetables are tender.
Discard bay leaves. In a small bowl, combine the parsley, salt, and the remaining flour, basil, thyme and garlic powder. Add cold water; stir until smooth. Stir into stew. Bring to a boil; cook and stir for 2 minutes or until thickened. Yield: 6 servings.

Went to Wazoos today and Peytons suppossed to start paying at 18 months but I figured I'd ask since I know a lot of places don't make you pay if you do not play. She plays with the "baby" toys but won't even get in the baby bounce house. She's still so tiny and scared. So I didn't have to pay for her and ...I had a free admission from Keagans bday party we had there so I only had to pay for 2 out of 4 kids!

While using my super awesome sonic gift card Lauren got me for watching her kids this week I saw it said if you register online you get a free treat. So I figured what the heck. I registered it and got my choice of a free tots, drink or cream slush coupon! So I got that coupon and by registering I learned that everytime I reload it if I reload it with $15 I get the same coupon offered and $25 I get a free burger or other food items. Well we all know how I like my sonic so this is a cool thing for me and I'll def be reloading it!

Then I did a survey on the bottom of the whataburger reciept (what Bryan had for dinner) and got a free whatburger for doing so! So he can use that for lunch some day at work!See More

INGREDIENTS


Shrimp Tetrazzini


8oz uncooked linguine
3tablespoons butter or margarine
3tablespoons all-purpose flour
1/2teaspoon lemon-pepper seasoning
1 3/4cups Progresso® chicken broth (from 32-oz carton)
1/2cup half-and-half
2tablespoons dry sherry, if desired1
1/2cups frozen cooked deveined peeled medium shrimp, thawed, tail shells removed
1cup Green Giant® Valley Fresh Steamers™ frozen baby sweet peas, thawed

Topping
2tablespoons butter or margarine, melted
1/3cup Progresso® plain bread crumbs
2tablespoons shredded fresh Parmesan cheese.


DIRECTIONS
1Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook linguine as directed on package.2Meanwhile, in 2-quart saucepan, melt 3 tablespoons butter over medium heat. Stir in flour and lemon-pepper seasoning. Stir in broth; heat to boiling, stirring constantly. Stir in half-and-half, sherry, shrimp and peas.3Drain linguine; place in 13x9-inch (3-quart) glass baking dish. Pour sauce over linguine; toss to mix.

In small bowl, mix 2 tablespoons melted butter and the bread crumbs. Sprinkle over shrimp mixture. Sprinkle with cheese.5Bake about 30 minutes or until mixture is hot and topping is golden brown..Spaghetti can be used in place of the linguine.
Fresh mushrooms would make a nice addition to this recipe

our baby is growing up

well our youngest has officially moved over to the big girl bed and has been sleeping in there a few nights with no problems! I hate thinking this is the last time I'll ever go through these memories as she is the last baby we are having! A bitter sweet moment!

She shares a loft bed with her sister and is on the bottom. We got her an adorable little owl bedding set that she just loooves! We haven't put together the bottom loft yet. It's not very high but I'm not sure if I want to do it just yet or keep the mattress on the floor and as low as possible for a few months.

I can't believe that she is 18 months today!! And still nursing strong!!

Well Peyton's definitely getting over her fear of water and just jumping right in now and swimming around! So glad she feels comfortable enough to start exploring but hopefully she doesn't get to comfortable to start running off from me haha

The kids had a blast at the pool today! Didn't get to stay as long as we would like because Peyton gets tired pretty fast so we only wind up making it an hour or a little over usually but they had fun! They are so tan already!!

Subway for dinner tonight! All for $6 after coupons! yay!

had to go to Sam's today so I went ahead and stopped at CVS to pick up some of their deals. Of course snice the sale restarts on Fri they were wiped out of most the stuff but I got 2 excedrin, 4 garnier shampoos, 2 oral b toothe brushes, 12 pk dr pepper, and 2 ban deoderants for $15 since most everything was free then turned around and used my rewards!

I said I was going to take a break this week since we didn't really need anything till I saw my detergant was on sale plus a coupon and then Bryans razor.. so I wound up shopping lol here's my deals!

1st day at the pool of the summer!!

This was Peytons first year actually getting to play in the pool by herself! Last year she was just barely starting to crawl and this year she's running around and getting to enjoy everything!

We get to go on post for free but it's a bit of a drive and there is a pool down the street from us that is only $60 for our whole family to go for the summer. I figured as often as we like to go it was more cost efficient to just get the pass. Plus I really really love there is shade everywhere so you're not just sitting in the heat and the entire baby area is shaded so they don't get burnt. It also is only a few inches deep so a lot more shallow then on post and makes me more comfortable for daily use.

She was really edgy about the water still. She loves baths and loves to jump in and wants to go to the water but freaks when she gets there. She also HATES being sprayed or splashed!






After we were done we went over to the church park out reach day and the kids had fun playing in the bounce houses, rock climbing, getting in the dunking booth and getting some shaved ice! mmmmm

Kinder Graduation

I can't believe that my 2nd baby graduated Kinder today! I officially have one on the way to 3rd grade, 1st grade and prek! *cry*

He had a great year. He really came out of his shell this year and became a leader, started finally participating some in singing and made a lot of friends! I am very proud of him and how far he has come from starting out at 3yrs old in early special ed and hiding and not speaking after his diagnoses of autism to this! He has really shown me how one can over come anything!
