today the kids pulled "go get ice cream" so we hit up Sonic after 8pm for their 1/2 price shakes!

the girls also had fun giving mommy and each other make overs today!

Cheesy Chicken-Tortilla Lasagna

INGREDIENTS
1 can (10 oz) Old El Paso® enchilada sauce
2 cups chopped plum (Roma) tomatoes (about 4 medium)
2 cups cubed cooked chicken
8 medium green onions, finely chopped (1/2 cup)
1 can (15 oz) Progresso® black beans, drained, rinsed
1 cup Southwest ranch veggie dip (from 16-oz container)
8 corn tortillas (6 inch), cut in half
1 1/2 cups shredded Mexican cheese blend (6 oz)
1/4 cup sliced ripe olives
2 tablespoons chopped fresh cilantro
DIRECTIONS
1 Heat oven to 375°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread 2 tablespoons of the enchilada sauce in bottom of baking dish. 2 In medium bowl, mix tomatoes, chicken, onions and beans. In another medium bowl, mix remaining enchilada sauce and the veggie dip until well blended. 3 Arrange 8 tortilla pieces over sauce in dish, overlapping as necessary. Spoon half of the chicken mixture over tortillas; sprinkle with 1/2 cup of the cheese. Spoon half of the sauce mixture over cheese. Repeat layers once, reserving 1/2 cup cheese. 4 Cover with foil. Bake 40 to 45 minutes or until hot. Sprinkle with reserved 1/2 cup cheese. Bake uncovered about 5 minutes longer or until cheese is melted. Let stand 5 minutes before serving. Sprinkle with olives and cilantro.
One cup of sour cream mixed with 1 tablespoon Old El Paso® taco seasoning mix can be used in place of the veggie dip.
Tall glasses of cold milk would taste delicious with this lasagna.

Today the kids pulled out "board games" for our summer fun!! Not to long ago I found this really cool large Checker board at a garage sale so we got to play with that for the first time and I kicked my husbands booty lol

we're spending some time outside in the water right now while the oldest is at a baseball game! I'm still not feeling to great so I skipped out some this week. I have a horrible earache and have an infection going on too.
Went to price chopper tonight and scored some awesome deals!! My kids all love sunny d and they had it on sale for $.69 a peice!! I got 20 of them (and no I didn't wipe them out they had a ton lol )
we had chili dogs and beans for dinner here tonight so pretty laid back day!

we missed the summer movies this morning, got way off schedule! I was going to take the kids for a treat to see Madagascar then completely forgot that today was the first day of our summer ballet class right in the middle of when we were going so we headed off to the pool for a bit instead and then Brooklyn had her first dance lesson here in Kansas for the summer! The boys both had baseball games tonight so it's been a busy day!

For Monday's Summer fun the kids pulled out bowling so we headed off to the bowling alley to take advantage of the kids free summer bowling program!
Brooklyn (my 3rd child) beat us all twice!

We bought tickets to the grand opening in Legoland back in Grapevine, TX and had an emergency come up and had to reschedule our trip. We couldn't get them to refund or mail our tickets, they told us just to call when we were ready to use them. I spent over a year doing this with no call backs, no email backs, etc.. so we move to Kansas and thankfully one was opening here so I requested to have them transfered and was told they would then no response for another few months. Finally after filing a complaint with the BBB we got our tickets and were able to use them after church today and the kids had a blast!

Well I'm sure I've messed it up some and I don't know all the starting basics but I did the best I could and started our first garden with some veggies today with the kids!! We also planted some flowers behind my bedroom window where it was bare!

ingredients
1-1/2 pounds ground beef
1 medium onion, diced
1 can (16 ounces) kidney beans, rinsed and drained
1 can (10-3/4 ounces) condensed tomato soup, undiluted
1 can (8 ounces) tomato sauce
1 teaspoon beef bouillon granules
1-1/2 cups water
Dash pepper
8 ounces spiral pasta, cooked and drained
Grated Parmesan cheese, optional
Directions
In a skillet, cook beef and onion over medium heat until no longer pink; drain and set aside.
In a large saucepan, combine the beans, soup, tomato sauce, beans, bouillon, water and pepper. Add cooked noodles and beef; heat through. If desired, garnish with Parmesan cheese. Yield: 4-6 servings

I didn't get a lot of pictures of this one because some how the kids all wound up in their underwear lol so the one I got of the boys was probably the only safe one to post lol
for summer fun today we did a little experiment which to me was an epic fail but they still absolutely loved it!
we had a jello war! The idea was to fill up the pool full of jello for them to play in but all the jello I made was still not enough but was still exciting for them to have a jello war with and they loved it!

then the boys got some hair cuts since they were so long over due and my daughter convinced me to finally put hot pink high lights in her hair which my husband is not oh so thrilled about but it was fun haha

they also finished up their last night of Vacation Bible School and had a blast this week and ended with some fun ice cream snacks!

Today we had fun painting we home made finger paints and other paints that we got from friends who did a barter with us with their home made items for some clothes we had to get rid of! Now if you're interested in making some simple fun and easy homemade paint it's really easy and here is a recipe!!
Supplies:
Flour
Sugar
Salt
Food coloring
Plastic cups
Add 2 T of sugar into a sauce pan.
Add 1/3 cup of flour to the saucepan as well
Mix with 2 cups of water and whisk until smooth. Turn on the heat and stir continually until the mixture thickens
Pour into your plastic cups equally. You'll one cup for every color of paint you'd like to make.
Mix in a couple drops of food coloring and stir until completely dissolved. Let cool completely before allowing your little toddler to stick their fingers in and get dirty!

Today was lots of fun at the pool! We had a drs appointment and they put my oldest on a steroid inhaler twice a day to hopefully help things with him. So between that and the next appointment we enjoyed the pool and even more so since it was so early it was completely empty!

Today the kids started Vacation Bible School for the week! They had a blast!! Met a lot of new friends, played some great fun games and told me all about this volcano that irrupted with meat sauce?? I didn't get to see that in action but it looked pretty crazy lol
I also scored some free tickets to go see Tim McGraw and Kenney Chesney in Kansas City! My friend and I had a blast and enjoyed all of the eye candy hehe

we made some fun race tracks out of pool noodles! You just cut them in half, line them up down the stairs and let the racing begin!

Today we pulled out the pool popcicle stick! So we went to the pool on post which is always great free fun! Our pool here has a spray park attached which I love! I think I got a little sunburned though!

BLT Pasta Salad

New recipe for dinner tonight!
INGREDIENTS
Salad
2 cups uncooked rotini pasta (6 oz)
1 package (12 oz) bacon, cut into 1/2-inch pieces
3 cups chopped tomatoes (2 to 3 large)
4 cups lightly packed torn leaf lettuce
Dressing
1/2 cup sour cream
1/4 cup mayonnaise
1 tablespoon white wine vinegar
1/2 teaspoon salt
1/4 teaspoon cracked black pepper
DIRECTIONS
1 Cook and drain pasta as directed on package. Rinse with cold water to cool; drain. 2 Meanwhile, in 12-inch nonstick skillet, cook bacon over medium heat 5 to 8 minutes, stirring often, until crisp; drain on paper towels. Set aside 1/4 cup bacon for garnish. 3 In small bowl, stir dressing ingredients until blended. 4 In large bowl, stir tomatoes, dressing and remaining bacon. Stir in pasta. Place lettuce in large shallow bowl. Spoon salad over lettuce; sprinkle with reserved bacon.
The dressing can be made up to 1 day ahead; cover and refrigerate. Assemble salad just before serving.
Look for juicy ripe tomatoes for this recipe and store them at room temperature to maintain their flavor. Reserve any leftover tomato juice and seeds from cutting the tomatoes and add them to the dressing for additional flavor.

Apple Oat Crisp

Trying this one out for desert tonight!!

Serve this apple crisp with ice cream or whipped topping, for a special dessert. Ingredients: 5 medium tart apples, peeled, cored, and sliced 1/3 cup firmly packed light brown sugar 1/3 cup granulated sugar 1/2 cup all-purpose flour 3/4 cup quick cooking oats 1/2 cup melted butter 1/3 cup water whipped cream or vanilla ice cream Preparation: Arrange sliced apples in a buttered 8-inch square baking dish. In a bowl, combine the sugars, flour, and oats; stir in melted butter. Spread mixture over the apples. Pour water evenly over top. Bake in a 375° oven for 30 minutes, until apples are tender and top is nicely browned. Serve warm or cooled with ice cream or whipped cream. Serves 4.

Campbell's Kitchen Tasty 2 Step Chicken

1 tablespoon vegetable oil
1 1/4 pounds skinless, boneless chicken breast halves
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or Healthy Request®)
1/2 cup water
Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook for 10 minutes or until well browned on both sides. Remove the chicken from the skillet. Stir the soup and water in the skillet and heat to a boil. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 5 minutes or until the chicken is cooked through.

Our 2nd child got to be one of the lucky few to get picked to attend the Royal's Baseball Camp in Kansas City!! He had so much fun and got a lot of great pictures and learned a lot of great baseball tips and tricks!!

Bobless Kabobs!

One of my big favorite things to make for dinner has been easy Bobless Kabobs! Just get a few yellow or red min potatoes and cut them in half and throw them in the skillet on oil, some steak and shrimp in another skillet with some season salt and cook till done! The family has loved this one for an extra treat one night and you can do a lot of potatoes and put it with some pasta or rice and use less meat to cut on cost!
